How frustrating is it when you're told that your computer you're working on is too old and it's really not worth fixing as it will cost too much. So then you take their advice and and buy a new laptop and six months later it crashes (the old one was six years old and hadn't stopped just slowed down a lot) ten days before Christmas and because it seems everyone either slows down or stops over Christmas IT'S STILL NOT BACK. AHHHH.
Deep breath.
Anyway I took some tomato tarts to a Christmas Party a few weeks ago and some ladies requested the recipe so I'm sorry for the delay in posting it.
Ingredients:
40gms unsalted butter
1 tablsp brown sugar
1 tablsp sherry vinegar
2 french eschalots - sliced
250gm punnet cherry tomatoes
salt & pepper
2 sheets puff pastry
12 sprigs thyme
Method:
Pre-heat oven to 200
Grease a muffin pan.
Place butter - sugar & vinegar in a non-stick pan over medium heat and stir until butter melted and sugar dissolved.
Add eshalots, tomatoes and salt & pepper and cook for 5 minutes until caramalized .
Use a round cutter to cut the pastry to fit the top of the tin with a little tuck-in.
Divide mixture into the 12 sections.
Top with pastry and bake for 15 minutes until puffed and golden.
Turn out immediately onto a rack and top with a sprig of thyme.
They are delicious.

Sorry to hear about your computer Helen, I suspect it woudl be very frustrating. Thank you for the recipe, I am going to have a go this weekend hopefully.
